Cookie Preparation

Preheat the Oven
Preheat your oven to 350°F (175°C) to prepare for baking the cookies.

Cream Butter and Sugars
In a large bowl, beat together the unsalted butter, granulated sugar, and brown sugar until light and fluffy.

Add Eggs and Vanilla
Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.

Combine Dry Ingredients
In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Mix Dry Ingredients with Wet Ingredients
Gradually add the dry ingredient mixture to the wet ingredients, mixing until just combined. Fold in the chocolate chips.

Scoop and Bake
Scoop large portions of the dough onto a baking sheet lined with parchment paper, leaving space between each cookie. Bake for 12-15 minutes, or until golden brown. Allow to cool.

Prepare Ice Cream
Scoop the ice cream into a bowl and let it soften slightly for easier spreading.

Assemble Sandwiches
Take one cookie, place a generous scoop of softened ice cream on top, and then press another cookie on top to form a sandwich.

Top with Whipped Cream
Once all sandwiches are assembled, add a dollop of whipped cream to the top of each sandwich.

Drizzle with Sauces
Drizzle caramel sauce and chocolate sauce over the whipped cream topping.

Finish with a maraschino cherry on top of each sandwich for decoration.
