Cook the Vegetables
In a large skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced onions, green bell peppers, and mushrooms. Sauté for 5-7 minutes until softened. Season with salt, black pepper, and garlic powder. Remove from skillet and set aside.

In the same skillet, add the remaining tablespoon of olive oil. Increase the heat to medium-high and add the thinly sliced beef steak. Cook for 3-5 minutes, stirring occasionally, until the beef is browned and cooked through.

Preheat your oven to 350°F (175°C). Slice the hoagie rolls lengthwise but not all the way through. Fill each roll with the beef and vegetable mixture. Top each with provolone cheese.
