Crust Preparation

Make the Crust
In a mixing bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined.

Form the Crust
Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in a preheated oven at 350°F (175°C) for 10 minutes. Remove from oven and let cool.
Filling Preparation

Prepare the Filling
In a large mixing bowl, beat the softened cream cheese until smooth. Gradually add granulated sugar and beat until combined.

Add Sour Cream and Vanilla
Add sour cream and vanilla extract to the cream cheese mixture. Mix until smooth.

Incorporate Eggs
Add eggs one at a time, mixing on low speed just until combined after each addition. Do not overmix.
Baking the Cheesecake

Pour the Filling
Pour the cheesecake filling over the cooled crust in the springform pan. Spread evenly.

Bake the Cheesecake
Bake in a preheated oven at 325°F (160°C) for 55-60 minutes, or until the center is set but still slightly jiggly.

Cool the Cheesecake
Turn off the oven, crack the door open, and let the cheesecake cool in the oven for 1 hour. Then, remove from oven and let cool to room temperature before refrigerating for at least 4 hours or overnight.

Once chilled and set, remove the cheesecake from the springform pan. Serve with your choice of toppings: chocolate sauce, caramel sauce, fresh strawberries, or nuts for Turtle topping.
