In a large pot, heat 5 gallons of filtered water to about 165°F (74°C). Add the pale malt, crystal malt, and carapils malt to the water and stir well.

Mashing the Grains

Maintain the temperature at around 150-155°F (65-68°C) for 60 minutes, stirring occasionally. After steeping, remove the grains and allow the liquid to drain back into the pot.

Steeping

Bring the liquid to a boil. Once boiling, add 1 oz of Cascade hops and boil for 60 minutes. Add the Centennial hops with 15 minutes left in the boil, and the Citra hops with 5 minutes left.

Boiling

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches around 70°F (21°C).

Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Pitch the American Ale yeast and seal the vessel with an airlock. Ferment for about 1-2 weeks until fermentation is complete.

Fermentation

Once fermentation is complete, dissolve 3 oz of corn sugar in 2 cups of boiling water and cool it. Add this solution to the beer before bottling. Bottle the beer and cap securely.

Bottling

Allow the bottled beer to condition for about 2 weeks at room temperature to develop carbonation.

Conditioning

Refrigerate the beer for a few hours before serving. Pour into a glass, and enjoy your homemade Founders All Day IPA!
