    Prepare the Catfish

    Rinse the catfish fillets under cold water and pat them dry with paper towels. Cut each fillet into strips.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, whisk together the eggs and milk. In a third bowl, combine the cornmeal, salt, black pepper, and cayenne pepper.

    Bread the Catfish

    Coat each catfish strip in flour, dip it into the egg mixture, then dredge it in the cornmeal mixture, pressing gently to adhere.

    Fry the Catfish

    In a large skillet, heat the vegetable oil over medium-high heat. Once hot, add the breaded catfish strips in batches, frying until golden brown and cooked through, about 3-4 minutes per side. Remove and drain on paper towels.

    Wash and chop the lettuce and slice the tomato into thin rounds.

    Lay a tortilla flat and layer on lettuce, a few catfish strips, a scoop of creamy coleslaw, sliced tomato, and a sprinkle of cheddar cheese.
