In a large brew kettle, heat 5 gallons of water to approximately 165°F (74°C). Add the Pale Malt and Caramel Malt, stirring well. Maintain a temperature of around 152°F (67°C) for 60 minutes.

Step 1: Mash the Grains

After mashing, sparge the grains with hot water to rinse out the sugars. Collect the wort in a separate kettle.

Step 2: Sparge the Grains

Bring the collected wort to a boil. Once boiling, add 2 cups of Northwest hops and boil for 60 minutes, stirring occasionally.

Step 3: Boil the Wort

After the boil, cool the wort quickly to about 70°F (21°C) using an immersion chiller or an ice bath.

Step 4: Cooling the Wort

Transfer the cooled wort to a sanitized fermentation vessel. Sprinkle the Ale Yeast on top of the wort and seal the vessel with an airlock.

Step 5: Pitch the Yeast

Allow the beer to ferment at a stable temperature (around 68-72°F or 20-22°C) for about 1-2 weeks until fermentation is complete.

Step 6: Ferment

Once fermentation is complete, dissolve 3 cups of corn sugar in 2 cups of water and boil for 10 minutes to create a priming solution.

Step 7: Prepare for Bottling

Add the priming solution to the beer, then transfer the beer into sanitized bottles. Cap the bottles securely.

Step 8: Bottle the Beer

Allow the bottles to condition at room temperature for 1-2 weeks to develop carbonation.

Step 9: Condition the Beer
