RATED 'M' SHAKES

Kick Back with a breezy blend of juicy hops and delicate malt character that’s dripping with fresh citrus flavors and zesty aroma.

In a large brew kettle, heat 3 gallons of water to about 165°F (74°C). Add the pale malt and caramel malt to the kettle, stirring to ensure all grains are submerged. Maintain the temperature at around 150°F (65°C) for 60 minutes.

Mashing the Grains

After 60 minutes, drain the liquid (wort) from the grains into a fermentation bucket. Rinse the grains with an additional 2 gallons of hot water to collect more sugars, allowing the water to drain into the fermentation bucket.

Sparging

Bring the collected wort to a boil. Once boiling, add the Citra hops and boil for 30 minutes.

Boiling the Wort

After 30 minutes, add the Cascade hops and Amarillo hops, boiling for an additional 15 minutes.

Adding Additional Hops

At the end of the boil, remove the kettle from heat and stir in the orange zest and lemon zest. Allow the wort to cool to around 70°F (21°C).

Flavoring

Once the wort has cooled, transfer it to the fermentation bucket. Sprinkle the ale yeast on top of the wort and seal the bucket with an airlock.

Pitching Yeast

Allow the beer to ferment at room temperature for about 1-2 weeks, or until fermentation activity has ceased.

Fermentation Process

Once fermentation is complete, prepare bottles and caps. Siphon the beer from the fermentation bucket into the bottles, leaving about an inch of headspace.

Bottling the Beer

Cap the bottles and allow them to carbonate at room temperature for an additional 1-2 weeks.

Made in the style of traditional Belgian wheat beer. Brewed with a generous portion of wheat and spiced with coriander, chamomile and Curaçao bitter orange peel.

WS Wit Beer

Subtle lime and floral notes from the hops combine with light citrus flavors imparted by the coriander and deep minerally water profile to make this complex but crushable Gose.

W4 Dry-Hopped Gose

Belgian style wit has subtle shades of pink and red from the hibiscus and a bright citrus flavor from the orange peel and hop additions.

Brewed using a traditional Belgian yeast for esters of ripe fruit & dry hopped with a heavy hand to add nuances of citrus peel & stone fruit.
