Fit Turkey Wrap

First, aged (lagered) below freezing to give our beer its crisp taste.

In a large mash tun, combine the water and barley malt. Heat the mixture to 65°C (149°F) and hold for 60 minutes to allow the enzymes to convert the starches into sugars.

Step 1: Prepare the Mash

After mashing, transfer the mash to a lauter tun and rinse with hot water to extract the sugars. Collect the wort in a kettle.

Step 2: Lautering

Bring the wort to a boil and add the hops. Boil for 60 minutes, stirring occasionally. This will add bitterness and flavor to the beer.

Step 3: Boiling

After boiling, cool the wort quickly to about 20°C (68°F) using a heat exchanger or ice bath.

Step 4: Cooling

Transfer the cooled wort to a fermentation vessel and add the yeast. Seal the vessel and allow it to ferment at 18-22°C (64-72°F) for about 1-2 weeks.

Step 5: Fermentation

After fermentation is complete, transfer the beer to a lagering tank. Add ice to bring the temperature down below freezing (around -1°C or 30°F) and allow it to age for 4-6 weeks. This process helps develop the crisp taste.

Step 6: Lagering

Once lagering is complete, carbonate the beer by forcing CO2 into the tank or adding a small amount of sugar for natural carbonation.

Step 7: Carbonation

Finally, package the beer in bottles or kegs and store it in a cool place until ready to serve.

Brewed using a traditional Belgian yeast for esters of ripe fruit & dry hopped with a heavy hand to add nuances of citrus peel & stone fruit.

TI Tripel Ale

Freshly harvested spruce tips from upstate NY give this beer a beautiful delicate piney flavor and Chinnok hops back up the evergreen flavor profile.

SX Spruce Tip Saison

Saison brewed with pilsner malt and flaked rice to lighten the body. New school german hop additions.
