In a large brew kettle, heat 5 gallons of filtered water to 165°F (74°C). Combine the pale malt, wheat malt, and flaked oats in a grain bag and submerge it into the heated water. Maintain a temperature of 150°F (65°C) for 60 minutes.

Mashing the Grains

After mashing, remove the grain bag and allow it to drain into the kettle. Rinse the grains with an additional 2 gallons of hot water at 170°F (77°C) to extract any remaining sugars.

Sparging

Bring the wort to a boil, and once boiling, add the Hallertau hops. Boil for 60 minutes.

Boil the Wort

With 15 minutes remaining in the boil, add the Curacao orange peel and coriander seeds to the kettle.

Add Adjuncts

5 minutes before the end of the boil, add the Saaz hops for aroma.

After the boil, cool the wort quickly using a wort chiller or an ice bath until it reaches 70°F (21°C).

Cooling the Wort

Transfer the cooled wort into a sanitized fermenter. Sprinkle the Witbier yeast on top of the wort and seal the fermenter.

Pitching the Yeast

Allow the beer to ferment at 68°F (20°C) for about 1-2 weeks until fermentation is complete.

Fermentation

After fermentation is complete, prepare your bottles and priming sugar if desired for carbonation.

Prepare for Bottling

Siphon the beer into bottles, leaving a little space at the top. Cap the bottles and allow them to carbonate at room temperature for another week.

Bottling

Chill the bottles in the refrigerator and serve in a wheat beer glass. Enjoy your homemade Blue Moon Belgian Style Wheat!
