    Split and toast

    Slice the bagel horizontally. Lightly butter each cut surface with about 1/2 tbs butter per side (use the full tablespoon across both halves). Set aside on a plate.

    Toast

    Toast the buttered bagel halves in a toaster or under a broiler until golden and crisp, about 2–4 minutes depending on your appliance. Remove and keep warm.

Scrapple

    Heat a nonstick skillet over medium heat. Add 1 tsp vegetable oil and swirl to coat. Add scrapple slices in a single layer (3 oz total, about 3-4 thin slices). Cook undisturbed for 2–3 minutes until the bottom is well browned and crisp.

    Flip the scrapple and cook the second side 1–2 minutes until browned and warmed through. Reduce heat slightly if browning too quickly. Transfer cooked scrapple to a plate and keep warm.

Egg & Cheese

    In a small bowl, crack 1 large egg and add 1 tablespoon milk, 1/4 tsp black pepper and 1 tsp salt (use less salt if your scrapple is salty). Whisk until combined and slightly frothy.

    Wipe the skillet used for scrapple with a paper towel to remove excess oil and return to medium-low heat. Add remaining 1/2 tbs butter to the pan and let melt, coating the surface.

    Pour the egg mixture into the pan. For a folded omelette-style egg: let eggs set at the edges for 20–30 seconds, gently push cooked edges to center with a spatula and tilt pan to let uncooked egg flow underneath. Continue until mostly set but still slightly soft on top, about 45–60 seconds. For a fried egg: pour, let set undisturbed until whites are cooked but yolk still runny, about 2–3 minutes. Choose your preferred style.

    Place the cheddar (1 oz) on top of the egg during the final 15–30 seconds to allow it to melt slightly. If needed, cover the pan briefly (10–15 seconds) to encourage melting.

    Fold the omelette over the cheese or slide the fried egg off the pan to assemble. Remove from heat.

Assembly & Finish

    Place the bottom toasted bagel half on a plate. Layer the warm scrapple slices on the bagel bottom evenly.

    Top the scrapple with the hot egg + melted cheddar. If using, add a few drops of hot sauce or ketchup and sprinkle chopped chives.

    Place the top bagel half over the sandwich. Press gently, slice in half if desired, and serve immediately.
