Prep & Toast Bagels

    Slice and toast

    Slice the bagels horizontally. Toast cut sides in a toaster or under a broiler until light golden and crisp about 1-3 minutes depending on toaster strength. Set toasted halves aside, cut sides up, while you cook sausage and eggs.

Cook Sausage

    Pan-fry sausage patties

    Heat a nonstick skillet over medium heat and add 1 tsp vegetable oil. When shimmering, add the sausage patties. Cook 3-4 minutes per side (longer if frozen: 5-6 minutes per side) until internal temperature reaches 160°F (71°C) and exterior is browned. Transfer to a plate and keep warm.

Make Scrambled Egg Layer

    Beat eggs

    In a small bowl, crack the 2 large eggs, add 1 tablespoon milk, 1 tsp salt, and 1/2 tsp black pepper. Whisk until combined and slightly frothy.

    Cook eggs

    Wipe the skillet lightly with paper towel and melt 1 tablespoon butter over medium-low heat. Pour the egg mixture into the skillet. Allow eggs to set at the edges for 10-15 seconds, then gently stir with a spatula, folding from the edges toward the center. Cook slowly for about 1.5-2 minutes until soft curds form but eggs are still moist (carryover will finish them). Remove from heat to avoid overcooking.

Assemble Sandwiches

    Build

    Place the bottom half of each toasted bagel on a plate. Top each with one cooked sausage patty. Divide the scrambled eggs evenly over the sausage patties. Top the eggs with a slice of cheddar cheese. Place the top bagel half over the cheese.

    Melt cheese (optional)

    If you prefer melted cheese, place assembled open-faced on a baking sheet and broil on high for 30-60 seconds (watch carefully) until cheese is melted, then cap with bagel tops.

    Finish & serve

    If using optional garnishes, spread mayonnaise or a few drops of hot sauce on the inside of the top bagel or sprinkle chopped chives over the eggs. Serve immediately while hot.
