Prepare bread & custard

Slice loaf
Preheat oven to 350°F (175°C). Using a serrated knife, slice the Pullman loaf into 3/4–1 inch thick slices. Arrange slices in a single layer on a sheet pan or plate while you make the custard.

Make custard
In a large mixing bowl, whisk together the eggs and granulated sugar until combined and slightly thickened, about 30 seconds. Whisk in the whole milk, heavy cream, vanilla extract, ground cinnamon, and sea salt until smooth and homogeneous.

Dip slices
Working 2–4 slices at a time, fully submerge each slice in the custard for 10–20 seconds per side, pressing gently so the custard soaks into the bread but the slices keep their shape. For a slightly crisper exterior, keep dipping time shorter; for more custard in the center, soak longer (up to 1 minute per side).

Arrange on baking tray
Generously butter a rimmed baking sheet or line it with parchment and dot with remaining butter. Place the soaked slices on the prepared sheet in a single layer with a little space between slices. Reserve any leftover custard for one more pass or small pancakes.
Bake

Bake until set
Bake in the preheated 350°F (175°C) oven for 18–25 minutes, flipping slices halfway through for even color (optional). The Pullman French toast is done when edges are golden brown, the top is set, and a toothpick inserted in the center comes out mostly clean with slight custard crumbs.

Optional broil for finish
If you want a deeper golden top, switch oven to broil on high for 1–2 minutes, watching closely to avoid burning.
Whipped butter & serve

Whip butter
While the toast bakes, whip 2 tablespoons of the softened unsalted butter with an electric mixer or by hand for 1–2 minutes until light and slightly fluffy. You can fold in a pinch of powdered sugar or a drop of vanilla if desired.

Warm syrup
Warm the maple syrup gently in a small saucepan over low heat or in a microwave-safe container until hot but not boiling (about 30–45 seconds in microwave).
