Method

Prepare bagels and ham

    Toast bagels

    Slice the 2 bagels in half horizontally. Toast the cut sides in a toaster or under a broiler until lightly golden and crisp, about 2–3 minutes depending on toaster. Set toasted halves aside on a plate, cut side up.

    Warm ham

    Heat a nonstick skillet over medium for about 1 minute. Add 1 tsp neutral oil and swirl. Place the 4 slices of deli ham in the skillet in a single layer and warm for 30–45 seconds per side until just heated and slightly browned at the edges. Transfer ham to a plate and keep warm.

Cook eggs

    Reduce heat to medium-low and add 1 tbsp butter to the same skillet. Crack 2 eggs into a bowl, add 1/2 tsp black pepper and 1 tsp salt, and beat lightly until combined. When butter is melted and foamy, pour eggs into skillet. Allow eggs to set at the edges for 10–15 seconds, then gently push cooked edges toward the center with a spatula so uncooked eggs flow underneath. Cook, stirring occasionally, until eggs are softly set but still moist, about 1–2 minutes. Remove from heat immediately to avoid overcooking.

    Alternate: Fried egg

    If you prefer a fried egg, heat 1 tsp oil over medium, crack each egg into the skillet and cook until whites are set and yolks reach desired doneness (about 2–3 minutes for runny yolk; flip for over-easy and cook 30–60 seconds more). Season with salt and pepper.

Assemble & finish

    Place 1 slice of cheddar cheese on the bottom half of each toasted bagel (cut side up). Divide the cooked eggs between the two bagel bottoms, placing eggs evenly on top of cheese. Top each with 2 warmed slices of ham. If using, sprinkle 1 tbs chopped chives or green onions over the eggs and add 1 tsp hot sauce per sandwich to taste.

    Place the remaining bagel halves on top to close the sandwiches. If you prefer the cheese melted, return assembled sandwiches to the skillet over low heat, cover for 30–60 seconds until cheese softens, or place under a broiler for 20–30 seconds — watch closely to avoid burning.
