Prepare cream cheese filling
In a medium bowl, beat the softened cream cheese with 2 tbsp granulated sugar and 1 tsp vanilla extract until smooth and fluffy using a fork or hand mixer (about 1–2 minutes). Stir in the lemon zest until combined.

Fold in berries
Gently fold the diced strawberries and blueberries into the sweetened cream cheese, keeping some whole berries for texture but avoid overmixing so the filling remains slightly chunky. Refrigerate the filling while you prepare the bread (10 minutes) to firm slightly.

Prepare bread
Using 8 slices of thick-sliced brioche or challah, trim crusts slightly if desired. On 4 slices, spread about 3 tablespoons of the chilled cream cheese and berry mixture in the center, leaving a 1/2-inch border. Top each with the remaining 4 slices to make 4 sandwiches. Press edges gently to seal; use toothpicks at the corners if needed to hold sandwiches together while dipping.

If you prefer a flatter profile for even cooking, gently press each sandwich with the palm of your hand or a heavy pan for 10–15 seconds.

Make dipping batter
In a shallow wide bowl or pie dish, whisk together 4 large eggs, 1 cup whole milk, 1 cup heavy cream, 2 tbsp granulated sugar, 1 tsp ground cinnamon, 1 tsp fine salt, and 1 tsp vanilla extract until smooth and slightly frothy.

Prepare cereal coating
Place the fruity cereal in a resealable plastic bag or food processor and pulse briefly until you have coarse crumbs with some small pieces (not a fine powder). Mix the crushed cereal with 1 cup fine dry breadcrumbs in a shallow dish to improve adhesion and create a sturdier crust.

Dip and coat sandwiches
Working one sandwich at a time, hold with tongs or a fork, dip both sides into the batter, letting excess drip back into the bowl (about 5–8 seconds per side). Immediately press each side into the crushed cereal mixture, pressing gently so cereal adheres to the wet batter. Make sure edges are coated. Set coated sandwiches on a wire rack while you heat the pan (sealed side up). Discard toothpicks before cooking.

Pan-fry stuffed french toast
Heat a large nonstick or cast-iron skillet over medium heat. Add 1 tbsp unsalted butter and swirl to coat. Place 2 coated sandwiches in the skillet (do not crowd). Cook 3–4 minutes per side, gently pressing with a spatula occasionally so the cereal makes contact with the pan, until golden brown and crisp and the filling is warmed through. Add the remaining 1 tbsp butter before cooking the second batch. Reduce heat slightly if the coating browns too quickly (aim for golden, not burnt).

Test doneness
If uncertain, insert a toothpick into the center seam to check temperature; it should come out warm and the cream cheese filling soft but not bubbling excessively. Total cook time per sandwich will be about 6–8 minutes.

Transfer cooked stuffed French toast to serving plates. Dust lightly with powdered sugar, drizzle with maple syrup, and top with extra fresh berries. Serve immediately so the cereal crust stays crisp.
