Watermelon Purée
Prepare watermelon
Cut the seedless watermelon into 1-inch cubes and measure about 3 cups. Place the cubes in a blender.
Blend
Add 1 tablespoon fresh lime juice and 1 teaspoon granulated sugar to the blender. Blend until completely smooth, about 30–45 seconds.
Strain and chill
Pour the purée through a fine-mesh sieve into a bowl or pitcher, pressing with a spatula to extract as much liquid as possible. Discard solids. Chill the purée in the refrigerator until ready to use (or use immediately).
Cocktail
Muddle mint
Lightly slap the mint leaves between your palms to release essential oils, then place them in the bottom of a cocktail shaker or sturdy glass.
Combine liquids
Add 2 oz white rum, 0.5 oz fresh lime juice, 0.5 oz simple syrup, and 3/4 cup of the prepared watermelon purée to the shaker (reserve any extra purée for topping or another drink).
Strain and serve
Strain the mixture into a chilled Collins or highball glass filled with fresh crushed ice. If you prefer a lighter drink, top with about 1 oz soda water and gently fold once to combine.
Garnish
Garnish with a small watermelon wedge or a sprig of mint. Serve immediately with a straw.
