Mimosa Pitcher

Method

Mimosa Pitcher

1

Chill and prepare fruit

Chill the sparkling wine and orange juice thoroughly for at least 2 hours. Slice the orange into thin rounds and quarter a few rounds or half-moons for garnish. If using strawberries, hull and slice them thinly and chill.

2

Combine juices

In a 2- to 3-quart pitcher, pour the 4 cups of chilled fresh orange juice. If you prefer a sweeter mimosa, stir in up to 1/4 cup simple syrup to taste, then refrigerate until ready to assemble.

3

Add fruit garnish

Add the orange slices and sliced strawberries to the pitcher. The fruit will infuse a subtle extra flavor and look festive.

4

Finish with sparkling wine

Just before serving, slowly pour the 1.5 liters of chilled sparkling wine into the pitcher over the back of a spoon or down the side to preserve bubbles. Stir gently once to combine — do not vigorously mix, or you will lose effervescence.

5

Serve

Ladle or pour the mimosa into chilled flutes or glasses, making sure each glass gets some fruit. Replenish sparkling wine from a chilled bottle as needed.

Poinsettia Pitcher

6

Chill and prepare garnishes

Chill the sparkling wine, cranberry juice, and orange liqueur for at least 2 hours. Rinse fresh cranberries and orange slices; pat dry. If using frozen cranberries as an ice substitute, keep them frozen until ready to serve.

7

Mix base

In a 2- to 3-quart pitcher, combine the 3 cups of chilled cranberry juice and 1/2 cup orange liqueur. Taste and add up to 1/4 cup simple syrup only if you want it sweeter. Stir to combine.

8

Add garnishes

Add the fresh cranberries and orange slices (or twists) to the pitcher. If you like a festive touch and to keep drinks cold without watering them down, add a handful of frozen cranberries to the pitcher just before adding the sparkling wine.

9

Add sparkling wine

Right before serving, slowly pour the 1.5 liters of chilled sparkling wine into the pitcher, pouring gently to retain carbonation. Stir once gently to integrate — avoid vigorous stirring.

10

Serve

Pour into chilled flutes or coupe glasses so each serving receives a few berries or an orange twist. Refill with chilled sparkling wine as needed.

Notes & Make-Ahead

11

Do not add sparkling wine more than 15–20 minutes before serving to preserve bubbles. You can combine juices and garnishes up to 6 hours in advance and keep refrigerated. For nonalcoholic versions, substitute sparkling water or nonalcoholic sparkling wine and omit the orange liqueur.
