    Prepare bacon

    Cook the 4 bacon strips until crisp. You can fry them in a skillet over medium heat (about 6–8 minutes, turning once) or bake on a sheet at 400°F (200°C) for 12–15 minutes. Transfer bacon to a paper towel-lined plate to drain and keep warm.

    Prepare avocado spread

    Halve and pit the avocado. Scoop the flesh into a small bowl and mash lightly with a fork. Stir in 1 tsp lemon juice, 1 tbsp mayonnaise, 1 tsp salt, and 1/2 tsp black pepper until combined but still a bit chunky. Taste and adjust seasoning to preference.

    Prep bread and cheese

    Spread about 1 tbsp softened butter on the outside of each bread slice (the side that will contact the griddle). On the inside of one slice, layer 2 slices of cheese and arrange half of the turkey (about 4 oz). On the other slice, spread half of the avocado mixture and layer the remaining turkey (about 4 oz) and the cooked bacon strips. If you prefer the avocado on both sides, divide accordingly.

    Assemble sandwich and grill

    Bring the sandwich together with buttered sides facing out. Heat a skillet or griddle over medium heat and brush lightly with 1 tsp olive oil or add a small pat of butter. Place the sandwich in the skillet and press gently with a spatula or a second heavy pan. Cook for 3–4 minutes per side, or until the bread is golden brown and the cheese is melted. If your pan gets too hot, reduce heat to avoid burning while allowing the cheese to melt.

    Rest and slice

    Remove the sandwich from the skillet and let it rest for 1 minute to allow fillings to settle. Slice the sandwich in half on a diagonal and serve immediately.
