Method

Pasta

  1. 1

    Cook pasta

Bring a large pot of water to a rolling boil. Add 1 tablespoon kosher salt. Add angel hair pasta and cook according to package directions (about 3-4 minutes) until al dente. Reserve 1/2 cup pasta cooking water, then drain pasta and toss lightly with 1 tablespoon olive oil to prevent sticking. Keep warm.

Scampi Sauce / Broil Topping

  1. 2

    Prepare sauce base

Preheat broiler to high and position an oven rack about 6 inches from the element. In a medium skillet over medium heat, melt 4 tablespoons of the butter with 1 tablespoon olive oil. Add minced shallot and cook 1-2 minutes until softened. Add minced garlic and cook 30-45 seconds until fragrant, taking care not to brown.

  2. 3

    Deglaze and reduce

Pour in 1 cup dry Chardonnay and bring to a simmer. Cook 3-4 minutes to reduce slightly. Stir in lemon juice, lemon zest, red pepper flakes, Old Bay seasoning, black pepper, and 1 teaspoon sea salt. Remove from heat and stir in remaining 2 tablespoons butter to create a glossy sauce. Taste and adjust seasoning.

  3. 4

    Combine seafood with sauce

Gently fold the large shrimp into the warm sauce to coat. Add the lump crab meat carefully, folding once or twice so the crab keeps some lumps. If you like a slight crust, gently toss seafood with 2 tablespoons dry breadcrumbs and 2 tablespoons grated Parmesan (optional). Sprinkle chopped parsley into the mixture.

Assemble & Broil

  1. 5

    Arrange in broiler-safe dish

Portion the cooked angel hair into a shallow broiler-safe baking dish or individual ramekins (divide pasta between 2 main-course servings). Create a small well in the pasta and spoon the shrimp and crab mixture over the top, distributing sauce evenly. If desired, sprinkle an extra 1 tablespoon breadcrumbs and 1 tablespoon grated Parmesan over the top for a golden finish.

  2. 6

    Broil to finish

Place the dish under the preheated broiler for 2-4 minutes, watching closely, until the top is bubbling and lightly browned and the shrimp are opaque and cooked through (internal shrimp temperature should reach 120-135°F, shrimp cook quickly). Remove from oven.

  3. 7

    Finish and serve

Sprinkle additional chopped parsley over each portion and serve immediately with lemon wedges on the side. Offer reserved pasta water at the table to loosen if needed.
