    Prepare the beef

    If not pre-sliced, partially freeze 1 lb beef for 30–45 minutes until firm, then slice as thin as possible across the grain. Place the slices in a bowl and season with 1 tsp kosher salt, 1/2 tsp black pepper and 1/2 tsp garlic powder; toss to coat evenly.

    Brown the beef

    Heat a large skillet or griddle over medium-high heat. Add 1 tsp vegetable oil and swirl to coat. Working in a single thin layer (do not overcrowd), add half the beef and sear 1–2 minutes without moving, then stir and cook another 30–60 seconds until just browned but still tender. Transfer to a plate and repeat with remaining beef. Reserve any accumulated juices in the pan.

    Cook the vegetables

    In the same skillet over medium heat add 1 tbsp unsalted butter. Add 1 cup thinly sliced yellow onion, 1/2 cup thinly sliced green bell pepper and 3/4 cup sliced mushrooms (if using). Season lightly with a pinch of salt and pepper. Sauté 6–8 minutes, stirring occasionally, until vegetables are softened and beginning to caramelize. Push vegetables to the side.

    Combine beef and vegetables

    Return the browned beef and any accumulated juices to the skillet with the vegetables. Stir to combine and continue cooking 1–2 minutes to marry flavors.

Sauce & Moistening

    Make the jus

    Add 1/2 cup beef broth and 1 tbsp Worcestershire sauce to the skillet. Stir, scraping up any browned bits from the bottom. Bring to a gentle simmer. If you prefer a slightly thicker jus, mix 1 tsp cornstarch with 1 tbsp cold water to make a slurry and whisk into the simmering sauce; cook 1 minute until slightly thickened.

    Adjust seasoning

    Taste the mixture and adjust salt and pepper to taste. Keep the mixture warm over low heat while you prepare the rolls and cheese.

Buns & Cheese

    Prepare the rolls

    Preheat broiler or set oven to 400°F (200°C) with a rack near the top. Split the 4 hoagie rolls and place cut sides up on a baking sheet. If desired, lightly butter the cut sides.

    Assemble and melt cheese

    Spoon an equal portion of the beef and vegetable mixture into each bun, making sure to include some jus to keep the sandwich moist. Top each portion with one slice of Provolone (or use American/Cheez Whiz as preferred). Place the baking sheet under the broiler for 1–2 minutes, watching closely, until the cheese melts and begins to bubble. Alternatively, bake at 400°F for 4–6 minutes until cheese melts.

Finishing & Garnish

    Remove sandwiches from oven, let rest 1 minute, then serve immediately while hot. Offer extra jus on the side if desired. Optionally, garnish with additional cracked black pepper.
