Prepare Cheese & Coating

    Cut the cheese

    Unwrap the mozzarella and pat dry with paper towels. Cut the 16 oz block into 12–16 sticks about 3/4 inch by 3/4 inch by 3 inches (or your preferred size). Place cut sticks on a baking sheet lined with parchment and freeze for 30–45 minutes until firm but not rock solid.

    Set up breading stations

    Place the flour in a shallow bowl and whisk to remove lumps. In a second shallow bowl, beat the 3 large eggs with 3 tablespoons milk until smooth. In a third shallow bowl, combine the breadcrumbs, grated Parmesan, garlic powder, dried oregano, salt, and black pepper. If using cornstarch, mix it into the flour bowl or dust the cheese sticks lightly before the first dredge.

    Bread the cheese sticks

    Working with 3–4 sticks at a time, dredge each frozen cheese stick first in flour (shake off excess), then dip into the egg mixture, letting excess drip off, and finally press into the breadcrumb mixture to coat thoroughly. For an extra-crisp, double-coat: return the coated stick to the egg mixture and then again into the breadcrumbs. Place breaded sticks on a baking sheet lined with parchment and return to the freezer for at least 30 minutes (preferably 1 hour) to ensure coating sets and reduces cheese leakage when frying.

Frying

    Heat the oil

    Pour about 1 to 1¼ liters of vegetable oil into a deep pot or deep fryer so that there will be at least 2–3 inches of oil depth. Heat the oil to 350°F (175°C). If you don't have a thermometer, heat until a small piece of bread sizzles and browns in about 60 seconds.

    Fry in batches

    Fry the frozen, breaded mozzarella sticks in small batches (4–6 at a time depending on pot size) for 1.5–2 minutes, turning as needed, until golden brown and crisp. Avoid overcrowding — it will drop the oil temperature and increase cheese leakage. Use a slotted spoon or spider to remove sticks and drain on a paper towel–lined baking sheet. If oil temperature falls below 325°F, allow it to return to 350°F before the next batch.

    Finish and rest

    After frying all batches, let the cheese sticks rest for 1–2 minutes to firm slightly. If any appear under-browned, return briefly to hot oil (10–20 seconds) watching carefully. Serve immediately for best texture.

    Serve the mozzarella sticks hot with marinara sauce and/or ranch on the side for dipping. Provide napkins — these are best eaten immediately while the center is melty and the exterior is crisp.
