Preparation
1. Prep bread and cheese
Lay out 4 slices of bread on a clean work surface. Arrange 2 slices of cheddar on two of the bread slices (these will be the inside faces). If using American cheese, place 1 slice on top of the cheddar for extra melt. Leave the other two bread slices plain for the top.
2. Seasoning (optional)
If using, lightly sprinkle about 1/2 teaspoon black pepper and 1/2 teaspoon garlic powder across the cheese on each sandwich to distribute seasoning evenly.
Assemble & Butter
3. Close sandwiches
Place the remaining bread slices on top of the cheese-covered slices to form two sandwiches, cheese side in.
4. Butter the outsides
Spread about 1 tablespoon of softened butter evenly on the outside face of each top and bottom slice (about 2 tablespoons total per sandwich pair). If using mayonnaise instead of butter, spread about 1/2 tablespoon on each outside face. Ensure an even, thin layer to help achieve a golden crust.

5. Heat pan
Place a heavy skillet or nonstick pan over medium-low to medium heat. Allow the pan to heat for 1–2 minutes until warm but not smoking. Using medium-low to medium heat lets the cheese melt without burning the bread.
6. Grill sandwiches
Place the sandwiches in the preheated pan, buttered side down. Cook for 3–4 minutes until the bottom is golden brown. Press gently with a spatula to encourage even contact. Flip the sandwiches and cook another 2–4 minutes until the second side is golden and the cheese is fully melted. If the bread browns too quickly before the cheese melts, reduce the heat slightly and cover the pan with a lid for 30–60 seconds to trap heat and speed melting.
7. Finish and rest
Remove sandwiches from the pan and transfer to a cutting board. Let rest 1 minute to allow the cheese to settle. Slice each sandwich in half diagonally or vertically and serve immediately.
