Burger Patties

Method

Burger Patties

  1. 1

    Prepare and shape patties

Place the ground beef in a bowl. Add kosher salt, freshly ground black pepper, Worcestershire sauce, and softened butter. Gently mix with your hands or a spoon just until combined — avoid overworking. Divide into 4 equal portions (about 4 oz each) and form into patties roughly 3.5 inches in diameter and about 3/4 inch thick. Make a shallow dimple in the center of each patty with your thumb to reduce puffing during cooking.

  2. 2

Bring the formed patties to room temperature for 15–20 minutes while you prepare other components; this promotes even cooking.

Executive Sauce

  1. 3

In a small bowl combine mayonnaise, Dijon mustard, ketchup, whole grain mustard (if using), lemon juice, minced garlic, sugar, and black pepper. Whisk until smooth. Taste and adjust seasoning — add a pinch more sugar for balance or a touch more lemon for brightness. Refrigerate until ready to assemble.

Toppings & Builds

  1. 4

Prepare produce: slice the tomato into 1/4-inch slices; slice the red onion into thin rings; separate and wash butter lettuce leaves; have pickles ready. Keep cheese and buns nearby for assembly.

  2. 5

    Cook bacon

In a medium skillet over medium heat, add the bacon strips and cook until crisp, turning occasionally, about 8–10 minutes. Transfer cooked bacon to a paper towel-lined plate to drain.

Finishing & Cooking

  1. 6

    Cook patties

Heat a heavy skillet or cast-iron pan over medium-high heat until very hot (about 3–5 minutes). Add the vegetable oil and swirl to coat. Place patties in the pan leaving space between them. Cook undisturbed for 3–4 minutes to form a brown crust. Flip patties and immediately top each with a slice of sharp cheddar. Continue cooking 2–4 minutes for medium (internal temp ~145–150°F / 63–66°C); adjust time for desired doneness. Remove patties to a resting plate and tent loosely with foil for 3–5 minutes.

  2. 7

Toast buns: While patties rest, brush cut sides of brioche buns with olive oil or melted butter. Return skillet to medium-low heat and toast buns cut-side down until golden, about 1–2 minutes.

  3. 8

Assemble burgers: Spread about 1 1/2 tablespoons of Executive Sauce on the bottom bun. Place 2 butter lettuce leaves, then the cheeseburger patty. Top with two bacon strips, a tomato slice, a few onion rings, and two pickle slices. Spread a thin layer of sauce on the top bun and close. Repeat for remaining burgers.

  4. 9

Serve immediately with fries or a simple salad.
