Fried Green Tomatoes

    Slice tomatoes into 1/2-inch thick rounds (about 8 to 10 slices from 3 tomatoes). Pat slices dry with paper towels to remove surface moisture.

    Prepare three shallow bowls or plates: bowl 1 — flour mixed with 1 tsp salt, 1/2 tsp black pepper and 1/4 tsp cayenne; bowl 2 — beaten egg mixed with buttermilk; bowl 3 — cornmeal and fine cornmeal (if using).

    Heat a skillet over medium heat and add vegetable oil and butter. Heat until shimmering but not smoking (about 325–350°F if using a thermometer).

    Dredge each tomato slice in seasoned flour, shake off excess, dip into buttermilk-egg mixture, then press into cornmeal mixture to coat well. Transfer to a tray and let rest 2 minutes so coating adheres.

    Fry tomatoes in batches in the hot oil, 2–3 minutes per side, until golden brown and crisp. Do not overcrowd the pan. Transfer to a wire rack or paper towel-lined plate and keep warm in a 200°F oven while finishing remaining slices.

Crawfish Julie Sauce

    In a saucepan over medium heat, melt 4 tbs butter. Add chopped shallot and cook until translucent, about 2–3 minutes.

    Add minced garlic and cook 30 seconds until fragrant. Stir in tomato paste and cook 1 minute to caramelize slightly.

    Pour in white wine or seafood stock to deglaze, scraping any browned bits from the bottom. Let reduce by half, about 2–3 minutes.

    Reduce heat to low and stir in heavy cream. Simmer gently until slightly thickened, 2–4 minutes. Season with cajun/creole seasoning, 1/2 tsp salt and 1/4 tsp black pepper.

    Add crawfish tails and warm through for 1–2 minutes so they absorb sauce flavors but do not overcook. Stir in lemon juice, chopped parsley and sliced green onion. Taste and adjust seasoning.

Poached Eggs & Assembly

    Bring a deep saucepan of water to a gentle simmer (not a rolling boil). Add 2 tsp white vinegar to the water to help egg whites coagulate.

    Crack each egg into a small dish or ramekin. Create a gentle whirlpool in the simmering water with a spoon and gently slip one egg at a time into the center. Poach eggs 3–4 minutes for runny yolks or 4–5 minutes for medium set yolks.

    Use a slotted spoon to lift eggs, gently blot any excess water with a paper towel, and keep warm on a plate while poaching remaining eggs.

    To assemble: place 2–3 fried green tomato slices on each serving plate. Spoon a generous 1/4 to 1/3 cup of warm crawfish Julie sauce over the tomato slices, making sure some crawfish are visible.

    Top the sauced tomato stack with one or two poached eggs (depending on appetite). Spoon a little more Julie sauce around/over the eggs, scatter chopped parsley or chives, and finish with freshly ground black pepper and a few drops of hot sauce if desired.

    Serve immediately so eggs remain runny and tomatoes stay crisp.
