Method
Coffee
- 1
Measure and grind
Weigh 60 g (0.06 kg) of whole coffee beans for approximately 6 standard 8-oz (240 ml) servings. Grind beans to the appropriate grind for your brew method: coarse for French press, medium-coarse for pour-over, fine for espresso. Use a burr grinder for consistent particle size.
- 2
Heat water
Bring 900 ml filtered water to the correct temperature: about 93°C (200°F) for most brew methods. If you don't have a thermometer, bring to a boil and let sit 30–45 seconds for pour-over/French press, or slightly less for delicate brews.
- 3
Brew
Brew using your chosen method: - Pour-over (V60/Chemex): Rinse filter with hot water. Add ground coffee, bloom with 60–90 ml hot water for 30–45 seconds, then continue pouring in slow concentric circles until you reach 900 ml total. Total brew time ~3–4 minutes. - French press: Add grounds to carafe, pour hot water, stir gently, place lid and steep 4 minutes, then press slowly. - Automatic drip: Add grounds and start machine. Adjust brew strength by grind and dose if needed.
- 4
Finish and season
Taste the brewed coffee. If desired, add up to 120 ml milk (warmed or steamed) and 2 tsp sugar or simple syrup per batch, or adjust per cup. Add a very small pinch of salt to reduce bitterness if preferred. Stir to combine.
- 5
Serve
Pour into cups and serve immediately. Offer additional milk, sweeteners, and stirrers at the table.

- 6
Prepare water
Bring 1200 ml filtered water to the appropriate temperature: 100°C (212°F) for black tea. If using green or white tea substitute lower temperature (75–85°C) and shorter steep times.
- 7
- 8
Steep
Pour hot water over the tea leaves or bags. Steep black tea for 3–5 minutes depending on desired strength (3 minutes = lighter, 5 minutes = stronger). For green/white tea use 1–3 minutes. If making iced tea, steep toward the stronger end (4–5 minutes) then cool quickly.
- 9
Strain and sweeten
Remove tea leaves or bags to avoid oversteeping. Stir in honey or sugar (about 2 tsp for this batch) to dissolve. Add fresh mint leaves and lemon slices as desired for aroma and brightness.
- 10
Serve
Serve hot in cups or cool to room temperature and refrigerate for iced tea. For iced tea, pour over ice and garnish with extra lemon or mint. Provide additional sweetener on the side.
