Prepare and form patties
Place the ground beef in a large bowl. Sprinkle the kosher salt, black pepper, and Worcestershire sauce over the meat. Gently combine with your hands or a fork until just mixed; avoid overworking. Divide the meat into 4 equal portions (about 4 oz each). Form each portion into a patty about 3/4-inch thick and slightly wider than the buns. Make a shallow dimple in the center of each patty with your thumb to reduce bulging while cooking.

Cook the patties
Heat a large cast-iron skillet or heavy-bottomed pan over medium-high heat. Add 1 tablespoon vegetable oil and swirl to coat. When the oil is shimmering and the pan is hot, place the patties in the skillet leaving space between them. Cook without moving for 3-4 minutes until a brown crust develops. Flip the patties and cook another 2-3 minutes for medium (adjust 1-2 minutes for rarer or more well-done). In the last 1 minute of cooking, place one slice of cheddar on each patty, cover the pan with a lid or foil to melt the cheese.

Toast the buns and prepare sauces
While the patties cook, spread the softened butter on the cut sides of the buns. Heat a second skillet or use the oven broiler on low. Toast the buns cut-side down in the skillet for 1-2 minutes until golden (or under the broiler 30-60 seconds—watch closely). In a small bowl, mix the mayonnaise, ketchup, and mustard to make a simple burger sauce. Taste and adjust seasoning as needed.

Assemble the burgers
Spread about 1 tablespoon of the burger sauce on the bottom half of each toasted bun. Place 1 leaf of lettuce on each bottom bun, add a cheese-topped patty, then top with 2 pickle slices, 2-3 tomato slices, and a few rings of red onion. Spread a little additional sauce on the top bun if desired, then place the top bun over the stack. Serve immediately while hot.
