Mix and form patties
Place the ground beef in a bowl. Add kosher salt, black pepper, and Worcestershire sauce. If using optional add-ins, add them now (smoked paprika, garlic powder, crushed red pepper). Gently mix with your hands until combined — do not overwork. Divide into 4 equal portions (about 4 oz each for 1 lb total). Form each portion into a loose ball, then flatten into patties about 3/4 inch thick. Make a shallow 1/2-inch wide dimple in the center of each patty with your thumb to reduce doming while cooking.

Cook patties
Place the patties on the hot grill or skillet, dimple side up. Cook undisturbed for 3-4 minutes until a good crust forms. Flip once and cook another 3 minutes for medium; cook 4 minutes on the second side for medium-well. In the last 1 minute of cooking, place a slice of cheddar cheese on each patty and close the grill lid or cover the skillet to melt the cheese. Internal temperature target: 160°F (71°C) for well-done, 155°F (68°C) for medium-well. Adjust times for desired doneness and thickness.

Remove cooked patties from heat and let rest on a plate loosely tented with foil for 3 minutes to redistribute juices.

Prepare vegetables
While patties rest or cook, slice the tomato into 1/4-inch thick rounds. Slice the red onion into rings. Separate and rinse lettuce leaves, then pat dry. Arrange pickles on a small plate.

Prepare sauces
In a small bowl combine mayonnaise, yellow mustard, and ketchup. Taste and adjust proportions to preference. This will be used as a burger sauce.

Assemble burgers
Spread a thin layer of the burger sauce on the bottom bun. Place a lettuce leaf on the sauce, then the cheeseburger patty. Add tomato slice, a few onion rings, and 2 pickle slices. Spread a little sauce on the top bun and place it on the burger. Repeat for remaining burgers.

Serve immediately with fries, chips, or a simple side salad.
