Prep and dry the wings
Pat the chicken wings dry with paper towels to remove excess moisture. This helps them crisp up.

Make the dry rub
In a large bowl, whisk together kosher salt, black pepper, paprika, garlic powder, onion powder, and cayenne pepper until evenly combined.

Coat wings
Drizzle olive oil over the wings and toss with the dry rub until every piece is evenly coated.

Bake the wings
Preheat oven to 425°F (220°C). Arrange wings on a baking sheet or rack in a single layer. Bake 25–30 minutes, flipping halfway, until skin is crispy and meat is cooked through.

Make the glaze
In a small saucepan over medium heat, combine Simp's BBQ sauce, hot sauce, honey, brown sugar, smoked paprika, and ground cumin. Simmer 5–7 minutes, stirring occasionally, until slightly thickened.

Toss with half the glaze and re-crisp
Remove wings from the oven. Toss them with half of the warm glaze to coat. Return to the oven for 5 minutes to set the glaze.

Finish with butter
Toss the wings in melted butter to give a glossy, buttery finish and a touch of extra richness.

Serve
Serve hot with celery sticks and ranch or blue cheese dressing on the side for dipping.
