Season and prep fish

Pat dry the fresh fish fillets. Rub both sides with Simp's Creole Seasoning and brush with 1 tablespoon olive oil to help the spices adhere.

Sear the fish

Heat a skillet over medium-high heat and add the fish fillets. Sear 2-3 minutes per side until the crust is golden and the fish flakes easily. Remove the fish and set aside.

Garlic finish in pan

In the same skillet, add the remaining olive oil and minced garlic. Sauté about 30 seconds until fragrant, then squeeze in the juice from one lemon wedge and swirl to deglaze the pan slightly.

Cook brown rice

Rinse the brown rice under cold water. In a pot, combine rice with 2 cups water and a pinch of salt. Bring to a boil, then reduce heat to low, cover, and simmer for 40-45 minutes until tender and the water is absorbed.

Fluff and rest

Remove the rice from heat and let it rest covered for 5 minutes. Fluff with a fork before serving.

Plate and garnish

Plate with a bed of brown rice, top with a fish fillet, drizzle any pan juices, and garnish with chopped parsley. Serve with the second lemon wedge on the side.
