Cook the grain
Rinse 1.5 cups short-grain brown rice under cold water until water runs clear. Combine rinsed rice, 3 cups water or vegetable broth, 1/2 tsp kosher salt, and 1 tbsp olive oil in a medium saucepan. Bring to a boil over high heat, then reduce to a low simmer, cover, and cook until tender (about 35–40 minutes for brown rice; 15–20 minutes for farro or quinoa—adjust liquid and time accordingly). Once cooked, remove from heat and let sit, covered, 10 minutes. Fluff with a fork and keep warm.

Prepare aromatics and greens
While the grain cooks, heat 1 tablespoon olive oil in a large skillet over medium heat. Add the minced garlic and chopped shallot; sauté until fragrant and softened, about 2–3 minutes, stirring so garlic doesn't brown. Add red pepper flakes and the optional frozen peas or edamame and cook 1–2 minutes until warmed through.
Wilt the greens
Add the mixed leafy greens (about 6 cups) to the skillet in batches if needed, tossing to wilt. If the pan seems dry, add a splash (1–2 tablespoons) of water or a teaspoon of the cooking liquid from the grain to help deglaze. Cook until greens are tender but still bright, about 3–5 minutes total. Stir in lemon zest, 1 tablespoon lemon juice, 1/2 tsp salt, and 1/4 tsp black pepper. Taste and adjust seasoning.
Fried Eggs & Finishes
Fry eggs
Heat a large nonstick skillet over medium heat and add 2 tablespoons unsalted butter or neutral oil. When the fat is shimmering, crack 4 eggs into the pan, spacing them evenly. For sunny-side up eggs, reduce heat to medium-low, cover the skillet briefly (about 2–3 minutes) so whites set but yolks remain runny. For over-easy, cook until whites set, then gently flip and cook 20–30 seconds. Season eggs with a pinch of salt and a grind of black pepper while cooking.
Finish and assemble
Divide the grains-and-greens mixture among 4 plates or bowls (about 1 to 1 1/4 cups per serving). Top each portion with a fried egg. Drizzle each plate with 1 tsp sherry or apple cider vinegar (or a little extra lemon juice) and optional hot sauce or chili oil to taste. Sprinkle with remaining cheese, toasted seeds/nuts, and chopped herbs.
