Prepare shaker and juices

Fill a cocktail shaker halfway with crushed ice. Measure and pour aged rum, 0.5 oz overproof rum (the cocktail component), fresh lime juice, fresh orange juice, orgeat, simple syrup, falernum, and Angostura bitters into the shaker.

Shake

Cap the shaker and shake vigorously for 10–15 seconds until the exterior of the shaker is very cold and the ingredients are well emulsified and slightly frothy.

Serve

Fill a large tiki mug or a double old-fashioned glass with fresh crushed ice. Strain the shaken cocktail over the crushed ice, letting it mound slightly above the rim to create a volcanic peak.

Float and flame (optional, use caution)

Carefully pour 1/4 oz overproof rum over the top of the crushed-ice mound to create a visible float. If you wish to flame: using a long match or long lighter, ignite the floated overproof rum for a few seconds to produce a brief blue flame, then extinguish by covering with a metal shaker tin or blowing it out. Only flame if experienced and in a safe, ventilated environment away from flammable materials.

Garnish

Insert a mint sprig and a lime wheel into the crushed ice near the rim. Optionally grate a small amount of nutmeg or cinnamon over the mint for aromatics. Serve with a straw and warn guests if the drink was recently flamed.
