Make the sauce
In a small bowl combine mayonnaise, ketchup, Dijon mustard, sweet pickle relish, apple cider vinegar, smoked paprika, hot sauce (if using) and salt. Stir until smooth and taste; adjust salt, vinegar or relish to balance sweet/tangy. Cover and chill while you prepare the rest (at least 10 minutes).

Season and form patties
Place the ground beef in a large bowl. Sprinkle Worcestershire sauce, kosher salt, black pepper, garlic powder and onion powder over the meat. Using your hands, gently mix just until combined—do not overwork. Divide into two equal portions and form each into a patty about 3/4-inch thick and slightly wider than the buns (they will shrink while cooking). Make a shallow dimple in the center of each patty with your thumb to promote even cooking.
Cook the patties
Heat a large skillet or cast-iron pan over medium-high heat until very hot. Add the neutral oil and swirl to coat. Place the patties in the pan, leaving space between them. Cook without moving for about 3-4 minutes until a deep brown crust forms. Flip and immediately place one slice of cheddar on each patty. Cook another 3-4 minutes for medium doneness (internal temp about 160°F/71°C). If you prefer medium-rare, reduce second side time to 2-3 minutes (note: ground beef should be cooked to safe temperature). Remove patties to a plate and rest for 3 minutes.
Toppings & assembly
Assemble the Holzman Burger
Spread a generous tablespoon of Holzman sauce on both the top and bottom bun. On the bottom bun place lettuce leaf, then one patty with melted cheddar, two tomato slices, two pickle slices, and a few rings of red onion. Top with the second patty if stacking double (this recipe yields two single patties for two burgers). If building a single double burger, stack second patty over the first. Finish with more sauce on the top bun and close.
Serve
Serve immediately while hot with extra sauce on the side. Recommended sides: fries, coleslaw, or a crisp salad.
