Wash and peel
Wash the potatoes thoroughly under cold running water. Peel them completely to achieve the classic translucent chip appearance.
Rinse and soak
Place the sliced potatoes in a large bowl of cold water and swish to remove surface starch. Drain and refill with 4 cups fresh cold water. Soak slices for 20–30 minutes (or up to 1 hour) to leach out more starch; this reduces sticking and helps chips crisp.
Dry completely
After soaking, drain the slices and spread them on clean kitchen towels or paper towels. Press gently with additional towels to remove as much moisture as possible. For best results, let them air-dry for 10–15 minutes on a cooling rack so both sides dry.
Frying & Seasoning
Heat oil
Pour the vegetable oil into a heavy-bottomed pot or Dutch oven to a depth of about 1 1/2–2 inches (enough to fully submerge slices). Attach a deep-fry or candy thermometer and heat to 350°F (175°C). If you don't have a thermometer, test by slipping one slice in; it should sizzle immediately and rise to the surface.
Fry in small batches
Working in small batches (about a handful of slices per batch — avoid overcrowding), gently add potato slices to the hot oil using a spider or slotted spoon. Stir gently and separate any slices that stick together. Fry until the chips turn golden and translucent at the edges and are crisp, about 2–4 minutes depending on thickness and exact temperature.
Drain and season
Use a slotted spoon to transfer cooked chips to a wire rack set over a sheet pan or to paper towels to drain briefly. While still hot, sprinkle evenly with kosher salt and freshly ground black pepper, and any optional seasonings you prefer (a light dusting of paprika or garlic powder, or a quick spray of malt or distilled vinegar for a tangy finish).
Second fry (optional for extra crispness)
For ultra-crisp chips, increase oil temperature to 370–375°F (188–190°C). Fry the drained chips a second time for 30–60 seconds until they are deeply golden and extremely crisp. Drain and season immediately.
Cool and serve
Let the chips cool completely on the rack; they will crisp further as they cool. Serve at room temperature. Store any leftovers in an airtight container once fully cooled to preserve crispness (best within 1–2 days).
Safety notes
Monitor oil temperature carefully and never leave hot oil unattended. Keep a lid nearby to smother flames in case of a fire; do not use water. Use tongs or a spider to avoid splatter burns.
