Brown the meat
Heat a large skillet over medium-high heat and add 1 tablespoon olive oil. Add ground beef and Italian sausage, breaking up with a spatula. Cook until no longer pink and beginning to brown, about 6–8 minutes. Use a slotted spoon to transfer meat to a bowl and drain off excess fat, leaving roughly 1 tablespoon drippings in the pan.

Return the browned meat to the skillet with the vegetables. Stir in the crushed tomatoes, tomato paste, Worcestershire sauce, dried oregano, dried basil, crushed red pepper flakes, brown sugar, salt, and black pepper. Bring to a gentle simmer, reduce heat to low, and cook uncovered for 10–12 minutes, stirring occasionally, until sauce thickens slightly and flavors meld. Taste and adjust salt and pepper if needed.
Cheese & binder
While the sauce simmers, combine softened cream cheese, shredded mozzarella (reserve 2 tablespoons for topping if desired), grated parmesan, beaten egg, and chopped parsley in a medium bowl. Stir until a smooth, spreadable mixture forms. Fold about two-thirds of the warm meat-sauce mixture into the cheese mixture so the cheeses melt slightly and bind the filling.
If the filling seems too loose, simmer it a few more minutes to reduce. The egg and cheeses will help create a slightly firmer, creamy filling suitable for sandwiches.
Assembly & finish
Place rolls cut-side up on a baking sheet and toast under the broiler 1–2 minutes until golden—watch carefully to avoid burning.
Spoon the warm, creamy meat filling generously into each toasted roll. Sprinkle reserved shredded mozzarella and the grated parmesan on top of each sandwich.
Place filled sandwiches back under the broiler for 1–2 minutes, just until the cheese melts and begins to bubble. Remove from oven, top with fresh basil leaves if using, and serve immediately.
