Prepare chicken

If using whole cooked chicken or raw chicken breasts: shred or dice into bite-sized pieces. If poaching raw chicken, simmer breasts in salted water with a bay leaf for 12–15 minutes until cooked through, then cool slightly and shred. Measure 3 cups shredded chicken.

Drain and thoroughly rinse the canned black beans in a colander; shake off excess water to avoid a soggy salad.

If using frozen corn, thaw and pat dry. If canned, drain and pat dry. Dice the red bell pepper and halve the cherry tomatoes. Finely dice the red onion and chop the cilantro.

In a large mixing bowl, combine the shredded chicken, black beans, corn, diced red bell pepper, red onion, cherry tomatoes, and chopped cilantro. Toss gently to combine.

If serving over greens, arrange 4 cups of mixed greens or romaine on a platter or individual plates and pile the salad mixture on top.

If using avocado, dice it just before serving and fold into the salad to avoid browning.

Dressing

In a jar or small bowl, combine 1/4 cup extra-virgin olive oil, 3 tablespoons fresh lime juice, 1 teaspoon ground cumin, 1 teaspoon salt, 1/2 teaspoon black pepper, 1/2 teaspoon smoked paprika, 1 teaspoon honey (or agave), 1 clove minced garlic, and 1/4 teaspoon red pepper flakes (if using).

Whisk vigorously or close the jar and shake until the dressing emulsifies and becomes slightly thickened. Taste and adjust seasoning: add more salt, lime juice, or honey as desired.

Pour about half of the dressing over the salad mixture and gently toss to coat. Reserve the remaining dressing to serve on the side or add as needed—this keeps the salad from becoming too wet if making ahead.

Finish & serve

Taste the dressed salad and adjust seasoning with additional salt, pepper, or lime juice. If you prefer a brighter flavor, add more lime juice; for more richness, add more olive oil or a touch more honey.

Sprinkle crumbled queso fresco or feta over the top and garnish with lime wedges. Serve immediately or refrigerate, covered, for up to 2 days (add avocado just before serving).
