Rinse and remove starch
Place the slices in a large bowl and cover with cold water. Swish vigorously for 30–60 seconds to release surface starch. Drain and repeat rinsing until water runs much clearer (2–3 rinses).
Soak
Combine 1 L cold water with 15 ml white vinegar in a bowl or container. Add the potato slices and soak for 30 minutes to 1 hour in the refrigerator. The vinegar helps preserve color and texture and reduces browning. After soaking, drain the slices in a colander.
Dry thoroughly
Lay the drained slices in a single layer on clean kitchen towels or multiple layers of paper towels. Pat repeatedly to remove as much moisture as possible. For best results, let air-dry for 10–15 minutes. Removing surface moisture prevents oil splatter and ensures crispness.
Frying medium
Heat the oil
Pour about 1 L neutral oil into a heavy-bottomed pot or deep fryer. Heat oil to 175°C (350°F). If you don't have a thermometer, test by slipping one potato slice in; it should sizzle steadily and begin to crisp immediately.
Fry in small batches
Working in small batches (enough slices to cover the bottom of the pot in a single layer without overcrowding), gently add potato slices to the hot oil with a slotted spoon or spider. Fry, stirring gently and separating any slices that stick, for 2–4 minutes until edges are light golden and centers are translucent to golden — chips will darken slightly after removal. Maintain oil temperature around 170–180°C (340–355°F); allow oil to return to temperature between batches.
Double-fry for extra crisp (optional)
For an extra crisp, remove chips when they are just set but not deeply browned (after first fry). Drain on paper towels and let cool for 5 minutes. Return to oil at 190–195°C (375–385°F) and fry briefly (30–60 seconds) until deep golden and crisp. Drain again.
Season while hot
Immediately after each batch is drained, sprinkle with a light pinch of the 1 tbsp salt (distributed across batches) and, if using, a little cracked black pepper or smoked paprika. Finish with flaky sea salt just before serving so crystals stay noticeable.
Finishing & serving
Cool and serve
Transfer chips to a wire rack set over a baking sheet or to a paper-lined basket to keep them crisp. Let chips cool for 1–2 minutes to crisp further. Toss lightly with finishing seasonings (flaky sea salt, pepper, paprika) to taste.
Optional vinegar service
If desired, serve with small ramekin of white or malt vinegar (about 15 ml per serving) so diners can sprinkle a few drops for an authentic Saratoga chip experience.
Storage
Serve immediately for best texture. If storing, let chips cool completely, then pack in an airtight container for up to 1 day; they will lose some crispness.
