Bring steak to room temperature
Remove the steaks from the refrigerator 30–45 minutes before cooking. Pat them dry with paper towels to remove any surface moisture.

Sear the steaks
Place steaks on the hot grill or skillet. For medium-rare (depending on thickness ~1"), cook 4–5 minutes per side. Avoid moving them during searing to get a good crust. If using a skillet, after flipping add the 2 tablespoons butter, crushed garlic cloves and thyme sprigs to the pan and tilt the pan to spoon melted butter over the steaks for about 1 minute (basting).

Check doneness
Use an instant-read thermometer: 125–130°F for medium-rare, 135°F for medium. If steaks need more time, move to a cooler part of the grill or reduce heat and continue cooking in 1–2 minute increments.

Rest
Transfer steaks to a cutting board and tent loosely with foil. Rest 5–10 minutes so juices redistribute. While resting, you can add 1–2 tablespoons compound butter on top if using.

Prepare skewers
If using wooden skewers, soak them in water for 20–30 minutes before grilling to prevent burning. Preheat the grill or a grill pan to medium-high.

Make shrimp marinade
In a bowl combine 1.5 tablespoons olive oil, 1 tablespoon lemon juice, paprika, smoked paprika (if using), minced garlic, 1/2 teaspoon salt and 1/4 teaspoon black pepper. Stir to combine.

Marinate shrimp
Add peeled, deveined shrimp to the bowl and toss to coat. Let sit for 10–15 minutes at room temperature (do not marinate much longer or the acid will begin to cook the shrimp).

Skewer shrimp
Thread 3 shrimp per skewer (or fit as desired) so they lie flat and cook evenly.

Grill shrimp
Place skewers on the grill or grill pan. Cook 1.5–2 minutes per side until shrimp are opaque and just firm with a slight curl. Total cook time is typically 3–4 minutes. Avoid overcooking to keep shrimp tender.

Remove shrimp from heat and squeeze a little lemon juice over them. Sprinkle with chopped parsley.
