Escargot and Garlic Butter

    Prepare Garlic Butter

    In a medium bowl, combine the softened butter, minced garlic, minced shallot, chopped parsley, chives, dry white wine, lemon juice, salt, pepper, and optional Pernod. Mix thoroughly until smooth and evenly combined. Taste and adjust seasoning (more salt, lemon, or wine as needed).

    Preheat Oven

    Preheat the oven to 375°F (190°C). If using an escargot plate, position it on a rimmed baking sheet for stability; if not, use a small baking dish or individual ovenproof ramekins.

    Fill Shells or Ramekins

    If your escargot came in shells, rinse them quickly under cold water and pat dry. Place one snail in each shell and spoon about 1 teaspoon of the garlic butter into each shell so the snail is well-coated and butter fills the shell. If using whole snails without shells or using a ramekin style presentation, place 3–4 snails per cavity and cover each cavity with about 1 tablespoon of garlic butter, ensuring butter surrounds the snails.

    Bake

    Place the prepared escargot plate or baking dish on the baking sheet and transfer to the oven. Bake for 10–12 minutes, or until the butter is bubbling and the garlic is fragrant but not browned. For a lightly browned top, switch to broil for 60–90 seconds, watching closely to prevent burning.

    Rest and Garnish

    Remove from oven and let rest 1–2 minutes. Sprinkle with the extra chopped parsley and a tiny squeeze of lemon if desired. Serve immediately so the butter remains hot and sizzles when served.

Toasted Crostini

    While the oven preheats or while escargot bakes, arrange baguette slices in a single layer on a baking sheet. Brush each slice lightly with olive oil and sprinkle with coarse sea salt.

    Toast in the oven at 375°F (190°C) for 6–8 minutes, flipping once halfway through, until edges are golden and crisp. Alternatively, broil for 1–2 minutes per side—watch closely to avoid burning. Remove and let cool slightly.

    For service, you can spread a little of the hot garlic butter from the escargot over crostini, or serve crostini alongside so guests can dip into the garlic butter and eat with the snails.

Finishing and Serving

    Arrange the baked escargot on a warmed plate or stand. Place toasted crostini alongside and lemon wedges on the side. Provide small forks or escargot tongs if available. Encourage diners to spoon hot garlic butter over crostini or dip crostini into the butter and enjoy with the snails.
