Smoked Chicken

Trim and dry

Pat the chicken leg & thigh quarters dry with paper towels. Trim any excess skin or fat so they lay flat and cook evenly.

Apply binder

Lightly coat each quarter with yellow mustard (about 1/2 tablespoon per piece) to help the rub adhere.

Make dry rub

In a small bowl combine kosher salt, black pepper, garlic powder, smoked paprika, onion powder, brown sugar and optional cayenne. Mix thoroughly so spices are even.

Season chicken

Rub the spice mixture evenly over all sides of each quarter, pressing it into the mustard-coated skin. Drizzle the olive oil over the outside and rub it in to help crisp the skin.

Rest before smoking

Let the seasoned chicken rest on a tray, uncovered in the refrigerator for 30–60 minutes if time allows; this helps the rub set and the skin to dry slightly for better smoke adhesion. If short on time, proceed immediately.

Prepare smoker or grill

Prepare your smoker for indirect cooking at a steady 225–250°F (107–121°C). If using a charcoal or gas grill, set up for two-zone cooking and place a disposable foil pan with a small amount of water under where the chicken will sit to help maintain moisture.

Prepare wood

If using wood chips, soak them in 1 cup water for 20–30 minutes, then drain. If using chunks, no soaking is necessary. Add 2 cups of chips/chunks to the smoker box, charcoal, or wood tray per the manufacturer's instructions.

Smoke the chicken

Place the chicken skin-side up on the smoker grate over indirect heat. Insert a probe thermometer into the thickest part of the thigh without touching bone. Maintain smoker temperature at 225–250°F (107–121°C). Smoke until the internal temperature reaches 165°F (74°C), typically 1.5–2 hours for 2 leg quarters but time will vary with smoker and piece size.

Spritz for moisture

Every 30–45 minutes starting after the first 45 minutes, spritz the chicken lightly with apple juice to keep the surface moist and promote a good smoke ring. Do not over-saturate the skin—just a few quick mists.

Optional finish for crisp skin

If you prefer crispier skin, after the chicken reaches 160°F (71°C) transfer it (briefly) to a 425°F (218°C) oven or place over direct heat on a grill for 5–8 minutes, watching closely, until the skin crisps and the internal temp reaches 165°F (74°C). Alternatively, brush with melted butter and return to smoker for the last 10 minutes.

Rest

Remove chicken from the smoker and tent loosely with foil. Rest for 8–10 minutes so juices redistribute and the final internal temperature stabilizes.

Platter & Garnish

Arrange the two smoked leg & thigh quarters on a large platter. Sprinkle chopped fresh parsley over the chicken and add lemon wedges around the platter. Serve immediately, allowing guests to squeeze lemon over as desired.

Leftovers: Cool to room temperature, refrigerate in an airtight container for up to 3–4 days. Reheat gently in a low oven (300°F / 150°C) until warmed through to preserve moisture.
