Temperature check and reheating

If meats are pre-cooked and chilled, reheat to a serving temperature of 145–165°F (63–74°C) depending on meat type. For pulled pork, pulled chicken, and brisket: gently reheat in covered pans in a 300°F (150°C) oven for 20–35 minutes, adding 2–4 tbsp of reserved cooking liquid or broth per pound to maintain moisture. For sausage links: reheat in the oven or on a grill until warmed through (internal temp 160°F/71°C). Stir pulled meats once halfway through reheating to distribute heat evenly.

Keep smoked brisket slices loosely tented with foil after reheating to rest for 5 minutes before slicing or arranging. Arrange each 1 lb portion in its own pan/bag labeled with the meat type.

For pulled meats, shred lightly with two forks and mix in a small portion of the provided BBQ sauce (optional) in the holding pan — reserve the large BBQ sauce container on the side so guests can add more.

Label each meat pan clearly (e.g., Pulled Pork, Brisket) and provide serving tongs for sliced meats and a serving spoon for pulled/shredded meats.

Sides (finish and serve)

If sides are chilled, reheat according to type: macaroni and cheese — 300°F (150°C) oven covered for 15–20 minutes until hot throughout; baked beans — simmer on low on the stovetop or heat in a covered pan in the oven until bubbling; potato salad and coleslaw — serve chilled, do not heat.

Transfer each pint of side into an appropriate serving pan or bowl. Stir heated sides once before serving to ensure even temperature.

Provide a serving spoon for each side and label the sides (e.g., Mac & Cheese, Baked Beans, Coleslaw, Potato Salad).

Condiments, bread, and extras (assemble and present)

Place the large BBQ sauce container in a central, accessible spot. Provide a small ladle or spoon for the sauce so guests can serve themselves. If desired, transfer part of the sauce to a smaller disposable container for immediate table access.

Arrange the cup of sliced pickles in a small bowl with tongs or forks for serving.
