General note

This bundle assumes meats are cooked and chilled. Reheat to serving temperature safely (165°F / 74°C internal) and hold hot at 140°F / 60°C or warmer until service.

Pulled pork: Place 1.5 lb pulled pork in an oven-safe pan. Add 2–3 tbs of water or apple juice and 1 tbs neutral oil to keep moist. Cover tightly with foil. Reheat in a 300°F (150°C) oven for 25–35 minutes, stirring halfway, until internal temperature reaches 165°F (74°C). If desired, stir in up to 1/4 cup of mild BBQ sauce before serving (reserve sauce containers for guests).

Smoked brisket: Arrange 1.5 lb sliced brisket in a shallow pan in a single layer if possible. Add 2–3 tbs beef broth or water and cover tightly with foil to keep from drying. Reheat in a 325°F (163°C) oven for 20–30 minutes until 165°F (74°C). For juicier slices, fold in any reserved brisket jus or 1–2 tbs butter before holding.

BBQ chicken: Place 1.5 lb chicken pieces or shredded chicken in a covered oven-safe pan with 2 tbs chicken broth or neutral oil. Reheat at 325°F (163°C) for 15–25 minutes until 165°F (74°C). Toss lightly with a little BBQ sauce if desired just before serving.

Smoked sausage: Slice sausage and layer in a baking pan. Add 1 tbs neutral oil or 2 tbs water, cover, and reheat at 350°F (177°C) for 10–15 minutes until warmed through (165°F / 74°C). Alternatively, reheat in a skillet over medium heat, 4–6 minutes, turning occasionally.

Season to taste: After reheating, taste and add salt and black pepper as needed. Transfer each meat to labeled chafing pans or insulated carriers for service and place a serving utensil (tongs or spoon) with each pan.

Sides (4 quarts total)

Cold sides (coleslaw, potato salad): Keep refrigerated until service. Portion each quart into a labeled serving container. Stir each side gently to reincorporate dressing before placing on the service table. Keep chilled on ice if event lasts longer than 1 hour.

Hot sides (mac & cheese, baked beans): Preheat oven to 350°F (177°C). Transfer each 1 quart side to an oven-safe pan, cover with foil, and heat 20–30 minutes until hot throughout (165°F / 74°C). Stir halfway through heating. For mac & cheese, remove foil for last 5 minutes if a light crust is desired. Transfer to warmers or chafing dishes for service.

Portioning: Place each side in a labeled quart container or chafing pan. Provide a serving spoon with each side. Estimate portioning to yield 24 servings total across sides (roughly 1.5–2 ounces meat equivalent with sides per person in this lite bundle).

Sauces, pickles & bread

BBQ sauces: Provide 2 pints total (1 pint mild, 1 pint spicy). Place each pint in a squeeze bottle or small bowl next to the meat station with a ladle or small spoon. Label sauces to avoid confusion.

Pickles: Transfer 1 cup sliced bread-and-butter pickles to a covered dish or small bowl. Place near sandwich bread so guests can add pickles to their sandwiches.

Bread: Arrange 24 slices of bread (or equivalent number of buns) on a covered tray. Keep bread covered until service to retain freshness. Provide tongs for guests to pick slices.

Serviceware & setup

Utensils & plates: Place 24 disposable plates and 24 disposable utensil packs at the start of the line so each guest can take one.

Serving tools: Provide 4 serving spoons (one per side) and 2 serving tongs (for meats). Ensure utensils are clean and placed so guests can serve without cross-contamination (one utensil per pan).

Holding & labeling: Keep hot items on chafing dishes or insulated carriers at 140°F (60°C) or above. Keep cold items on ice or refrigerated below 40°F (4°C). Label each pan with the item name and any common allergens. Refill pans as needed from warmers or cold storage to maintain presentation.

Cleanup note: Provide trash receptacles and a small sign with disposal instructions for plates and utensil packs. Remove and replace serving utensils if they fall onto surfaces before continuing service.
