Prepare Flavour Blend
Mix concentrates
In a small cup or measuring spoon, combine the vanilla extract, one dash of almond extract, and the cherry syrup. If you want the darker color typical of Dr Pepper, add one drop of liquid caramel coloring. Stir gently until the mixture is uniform.
Taste the blend by dipping a clean spoon; the flavour should be a sweet, slightly fruity-vanilla mix. Adjust cherry or vanilla by up to 1/2 tsp if you prefer stronger fruit or vanilla notes, but avoid overdoing almond as it is potent.
Assemble Soda
Fill a tall glass with about 1 cup of ice cubes.
Pour 12 fl oz of well-chilled carbonated water into the glass over the ice. If using a bottling-style serving, pour slowly down the side to preserve carbonation.
Add 1 fl oz of diet cola syrup or diet cola concentrate to the carbonated water. If using a concentrated syrup meant for bottling, follow its recommended dilution (this recipe assumes syrup meant to be diluted roughly 1:12).
Stir gently once with a bar spoon or long spoon to combine the syrup and carbonated water without losing too much fizz.
Add the prepared flavour blend to the glass. Stir gently again to distribute the vanilla/cherry/almond notes through the soda.
