Prepare bread

If making a sandwich: place bread or split sub roll on a clean surface. Spread 0.5 tbs mayonnaise evenly on one side and 0.5 tbs mustard on the other. Add cheese slice if requested.

Prepare baked potato

If making a baked potato: scrub russet potato clean, dry, and pierce skin several times with a fork. Rub with 1 tbs butter (or oil) and 0.25 tsp salt. Bake at 400°F (205°C) for 45–60 minutes until tender, or microwave on high 8–12 minutes, turning halfway, until soft. Split open and fluff with fork; add remaining 1 tbs butter, 0.125 tsp pepper to taste.

Pulled pork

Reheat pulled pork in a covered pan over medium-low heat with 1 tbs barbecue sauce per 6 oz and 2–3 tbs water or stock to keep moist. Heat until internal temperature reaches 165°F (74°C) and meat is hot and saucy, about 8–10 minutes, stirring occasionally. Pile 6 oz onto sandwich bread or on top of a split baked potato.

Pulled chicken

Reheat pulled chicken similarly: place 6 oz pulled chicken in a pan with 1 tbs barbecue sauce (or desired sauce) and 1–2 tbs water or stock. Warm over medium-low heat until 165°F (74°C), about 6–8 minutes. Arrange on sandwich or potato.

Turkey

For sliced turkey: warm 4 oz sliced turkey in a low oven (300°F/150°C) covered for 6–8 minutes or briefly on a skillet with 1 tsp oil until just heated through. Layer on bread with cheese and pickles as requested.

Ham

Warm 4 oz sliced smoked ham in a skillet over medium heat 2–3 minutes per side or in a low oven until warm. Place on sandwich with condiments and cheese.

Sausage

If using sausage: grill or pan-sear fully cooked sausage links or patties until heated through and nicely browned, about 6–8 minutes total, turning occasionally. Slice if requested and place in sandwich or beside baked potato.

Condiments & Cheese

For sandwiches: after meat is placed, add 1 slice cheese, 3 pickle slices, and any additional condiments (extra BBQ sauce for pulled meats, mayo/mustard). For baked potatoes: if meat is served on potato, spoon sauce and meat over potato and top with cheese if requested. Ensure sauces are in small sealed cups for boxed delivery to prevent sogginess unless the customer requests assembled hot.

Portion 1 cup mixed green salad into a small clamshell or salad cup, add 3 cherry tomatoes, and include a separate dressing cup. Add a single-serve bag of potato chips (approx. 1 oz) and one dessert (cookie or brownie) to the box. Place chilled items separated from hot components to maintain temperature.

Assemble lunch by placing sandwich or baked potato in the main compartment of the disposable box. Arrange sides (salad, chips, dessert) in separate compartments or with dividers. Include napkin and cutlery set. Label each box with the chosen protein and any dietary notes. For orders of 12 or more, pack boxes in crates or trays to keep level during transport. If hot, deliver within 60 minutes in insulated carriers to retain temperature; if chilled components included, keep items refrigerated until final assembly.
