Prepare potatoes

Preheat and wash

Preheat the oven to 425°F (220°C). Scrub the potatoes under cold running water to remove dirt. Pat them dry with a clean towel.

Pierce and oil

Use a fork to poke each potato 6–8 times all over to allow steam to escape. Rub each potato with about 1/2 tablespoon of olive oil so skin is evenly coated.

Season skins

Sprinkle about 1/2 teaspoon kosher salt over each potato, turning to coat evenly. Place the potatoes directly on the oven rack spaced about 2 inches apart. Put a foil-lined baking sheet on the rack below to catch any drips.

Bake until tender when pierced with a fork and skin is crisp, about 45–60 minutes depending on size (medium potatoes typically take ~50 minutes). Rotate once halfway through if your oven has hot spots.

Finish and serve

Prepare toppings while baking

While potatoes bake, cook bacon until crisp if using, then crumble. Shred cheddar and slice chives. Measure butter and sour cream so they're ready to serve.

Check doneness

When time is up, test one potato with a paring knife or fork — it should slide in easily with little resistance. If not done, return to oven and check every 5–10 minutes.

Split and fluff

Remove potatoes to a cutting board. Using a sharp knife, make a lengthwise slit across the top of each potato and squeeze the ends gently to open. Use a fork to fluff the interior flesh, creating a fluffy bed for toppings. Add 1 tablespoon butter into the cavity of each potato so it melts into the flesh.

Season interior

Season the exposed potato flesh with a pinch of kosher salt and a grind of black pepper to taste.

Assemble

Top each potato with about 1/4 cup shredded cheddar, 1/4 cup sour cream, and sprinkle with 1 tablespoon chopped chives. If using bacon, scatter one cooked and crumbled slice (or more to taste) on each potato. Drizzle a little olive oil if desired for sheen.

Serve immediately while hot. Leftovers: store cooled baked potatoes (without perishable toppings) wrapped in foil or airtight container in the refrigerator up to 3–4 days. Reheat in a 350°F (175°C) oven until warmed through.
