Prepare and arrange cured meats
Remove cured meats from refrigeration 20–30 minutes before serving to allow flavors and texture to open. On a large wooden board or platter, fan 2 oz prosciutto slices into a loose rose or folded half-moons on one area. Arrange the soppressata in slightly overlapping rounds beside the prosciutto. Fold coppa slices into thirds or roll into loose cylinders and place in a third area. If using mortadella, stack and fold or roll into ribbons and tuck between other meats to vary texture and height.

Prepare cheeses
Take cheeses out of refrigeration 30–40 minutes before serving. Cut the pecorino into thin wedges for easy slicing. Slice the taleggio into pieces that will hold together but are easy to spread, and cube the manchego into bite-sized pieces. Arrange each cheese in its own cluster on the board with a small space for accompaniments beside each cheese (about 1–2 inches).
Labeling/tips
If desired, tuck small labeled toothpicks or paper tags identifying each cheese to help guests.

Prepare condiments and pickles
Spoon whole grain mustard into a small bowl and place on the board. Spoon apple mostarda into a separate small bowl. Drain giardiniera in a fine-mesh sieve for 1–2 minutes to remove excess liquid, then roughly chop or leave as-is and place in a small dish. Arrange olives and cornichons in small piles or in separate bowls and place near meats and cheeses.
Prepare crostini and fruit
If using store-bought crostini, warm briefly in a 350°F (175°C) oven for 4–6 minutes. If making from sliced baguette: brush slices lightly with olive oil (about 1 tsp total), toast or grill until golden and crisp. Arrange crostini in one area of the board. Place grape or apple slices in a small cluster; if using apple, toss slices quickly with a squeeze of lemon to prevent browning.
Build the board
Start by placing cheeses and meats as anchors around the board, leaving negative space between clusters. Add small bowls of mustard and mostarda near cheeses that pair well (pecorino with mostarda, soft taleggio with mustard). Scatter giardiniera close to the mortadella or soppressata to pair with spicier meats. Fill gaps with olives, cornichons and fruit. Fan a few extra folded meat slices over cheese edges for easy grabbing. Garnish with thyme or rosemary sprigs for aroma.
Final touches and serving
Provide small spreaders or knives for each cheese, a toothpick or small fork for pickles, and small spoons for mustard and mostarda. Serve at room temperature; suggest guests try small bites combining meat, cheese, a smear of mostarda or mustard, and a piece of giardiniera or cornichon to experience contrasts (salt, acid, sweet, spice).
