Prepare glass
If using a rocks glass, chill it by filling with ice and setting aside while you prepare the cocktail. If you prefer, place a large ice cube into the glass now and set aside.
Combine ingredients
In a cocktail shaker, add 2 oz Plantation white rum, 0.5 oz apricot liqueur, 1.5 oz fresh pineapple juice, 0.5 oz fresh lime juice, 0.25 oz simple syrup, and 2 dashes of Angostura bitters.
Add ice and shake
Fill the shaker with roughly 1 cup of ice. Secure the lid and shake vigorously for 12–15 seconds, until the shaker is cold and slightly frosted. This chills and dilutes the drink to balance the fruit and spirit.
Strain
Discard the ice from the chilled glass if you used it to chill. Double-strain the shaken cocktail into the prepared rocks glass over the large ice cube (or fresh ice) using a Hawthorne strainer and a fine mesh strainer to remove small ice shards and pulp for a clean texture.
Garnish and finish
Express the oils of an orange twist over the surface of the drink by holding the twist skin-side down above the glass and giving it a sharp fold to release the oils, then rub the rim with the twist and drop it into the cocktail. Add an optional pineapple wedge or leaf for an extra tropical touch.
Serve
Serve immediately while cold. Sip and enjoy the balance of rum, apricot, and fresh pineapple with bright lime acidity and a hint of bitters.
