Waffle Fries
Prep potatoes
Wash and scrub the potatoes well. Do not peel unless you prefer. Using a mandoline with a waffle-cut blade (or a waffle cutter), slice the potatoes crosswise, rotating the potato 90 degrees between each pass to create the waffle/ crisscross pattern. Aim for slices about 1/4 inch (6 mm) thick. Collect slices and place in a large bowl of cold water as you work to remove surface starch.
Soak and dry
Soak the cut potato slices in cold water for 20–30 minutes to remove excess starch (this helps them crisp). After soaking, drain and rinse the potatoes, then spread them in a single layer on clean kitchen towels or paper towels and pat thoroughly dry. Any surface moisture will cause oil splatter and reduce crispness.
Light dusting
Place the dried potato slices in a large bowl. Sprinkle the cornstarch over them and toss gently to coat evenly. The cornstarch gives a light crispy crust when fried.
Heat oil
Heat the vegetable oil in a heavy-bottomed pot or deep fryer to 350°F (175°C). Use enough oil so fries can float without touching the bottom. If you don't have a thermometer, heat until a small piece of potato sizzles gently and rises.
First fry (blanch)
Working in batches (do not overcrowd), gently lower a few waffle fries into the oil and fry for 3–4 minutes until they are cooked through but pale and soft (not browned). Use a slotted spoon to transfer them to a wire rack or paper towel-lined tray to drain. Repeat with remaining fries.
Season between fries
While the first-fry fries are still warm, combine kosher salt, black pepper, paprika, and garlic powder in a small bowl and lightly sprinkle some of the seasoning over the blanched fries. Toss gently to distribute — this helps flavors adhere before the final crisping.
Second fry (crisp)
Increase oil temperature to 375°F (190°C). Return fries to the hot oil in batches and fry 1.5–3 minutes, until golden brown and crisp. Remove with a slotted spoon and drain on a wire rack or paper towels.
Finish and serve
While hot, taste and adjust seasoning: add more salt or sprinkle the optional dried parsley for color. Serve immediately for best crispness.

Combine mayonnaise, ketchup, hot sauce, lemon juice, and salt in a small bowl. Whisk until smooth and adjust seasoning to taste. Chill briefly if desired. Serve alongside the hot waffle fries.
