Waffle Fries
Prepare oil and fries
If using frozen waffle fries straight from the freezer, keep them frozen until ready to cook. Measure the oil into a deep skillet, Dutch oven, or heavy-bottomed pot so it comes up about 1 to 1 1/2 inches. This amount is generally about 1.5–2 cups for a 10–12 inch pan. Do not overfill the pot.
Heat oil
Heat the oil over medium-high heat until it registers 350°F (175°C) on a deep-fry thermometer. If you don't have a thermometer, test by dropping one small fry in: it should sizzle immediately and float.
Fry in batches
Working in a single layer, add a portion of the frozen waffle fries to the hot oil (about 1/3 of the bag or enough so fries move freely). Avoid crowding which lowers oil temperature. Fry for 3 to 5 minutes, turning occasionally with a slotted spoon or spider, until fries are golden brown and crisp. Adjust time depending on thickness and how frozen they were.
Drain and season
Use a slotted spoon to transfer cooked fries to a paper-towel-lined tray or wire rack set over a baking sheet to drain. Immediately sprinkle each batch evenly with fine sea salt and a little black pepper while the fries are hot so seasoning adheres.
Finish remaining batches
Repeat frying, draining, and seasoning with the remaining fries. If oil temperature drops below 325°F (160°C) between batches, allow it to return to 350°F before adding the next batch.
Optional crisp-up in oven
If you prefer to finish them in the oven for extra even crispness, heat the oven to 400°F (200°C) and, after frying, spread fries on a parchment-lined baking sheet and bake 4–6 minutes.

To make a simple seasoned fry, combine garlic powder (1 tsp) and smoked paprika (1 tsp). Immediately after frying and salting, toss hot fries in a large bowl with the seasoning blend and grated Parmesan (2 tbsp) until evenly coated.
