Method
Tater Tot Base
Heat oil
Pour the vegetable oil into a heavy skillet (cast iron preferred) to a depth of about 1/4 inch. Heat over medium-high heat until shimmering and about 350°F (use a thermometer if available).
Season tots
While the oil heats, place the frozen tater tots in a large bowl. Sprinkle with the salt and black pepper and toss briefly to coat.
Fry tots
Carefully add tater tots to the hot oil in a single layer (work in two batches if necessary to avoid crowding). Fry, turning occasionally with tongs, until golden-brown and crisp on all sides, about 8–10 minutes per batch.
Drain
Using a slotted spoon or tongs, transfer cooked tots to a paper towel–lined baking sheet to drain excess oil. Taste and adjust salt if needed. Keep warm in a 200°F oven while you finish remaining tots.
Optional Cheese & Garnish
Melt cheese (if using)
Arrange the hot tots on a serving platter or in an oven-safe dish. Sprinkle the shredded cheddar evenly over the hot tots. Place under a preheated broiler for 1–2 minutes, or into a 400°F oven for 3–5 minutes, until the cheese is melted and bubbly. Watch closely to avoid burning.
Add garnishes
Remove from heat and dollop sour cream across the tots or serve on the side. Scatter chopped chives (or green onions) and sliced pickled jalapeños over the top.
Optional Loaded Toppings (if desired)
Add proteins and sauces
If using bacon or cooked ground beef, sprinkle these evenly over the melted-cheese tots. Drizzle salsa or ranch dressing as desired. Combine multiple toppings for a fully loaded plate.
Serve
Serve immediately while hot and crispy. Provide extra sour cream, salsa, or ranch on the side for dipping.
