Method
Slider Patties
Mix
In a medium bowl combine 1 lb ground beef, 1 tsp salt, 1/2 tsp black pepper, 1/2 tsp garlic powder and 1 tbsp Worcestershire sauce. Gently mix with your hands or a fork until just combined; avoid overworking to keep patties tender.
Form patties
Divide the mixture into 8 equal portions (about 2 oz each). Lightly form into flat round patties slightly larger than the mini buns, about 2.5 inches in diameter and roughly 1/2 inch thick. Make a shallow dimple in the center of each to prevent doming while cooking.
Cook
Heat a large skillet or griddle over medium-high heat. Add 1 tbsp vegetable oil and swirl to coat. When oil is hot and shimmering, place patties in a single layer without crowding. Cook 2.5–3 minutes per side for medium (adjust 1–2 minutes for desired doneness). During the last minute of cooking, place half a slice of cheddar (so 4 patties get cheese) on each patty to melt and cover skillet with a lid briefly, or remove from heat and tent with foil to melt cheese.
Special Slider Sauce
Meanwhile, in a small bowl whisk together 1/4 cup mayonnaise, 1 tbsp ketchup, 1 tsp Dijon mustard, 1/2 tsp hot sauce (optional), 1 tbsp sweet pickle relish, 1/4 tsp onion powder, 1/4 tsp smoked paprika and 1/8 tsp salt. Taste and adjust seasoning or sweetness as desired. Chill or set aside at room temperature while patties cook.
Buns & Assembly
Prep buns
Split the 8 mini slider buns and spread a thin layer of softened butter on the cut sides. Toast buttered sides in a clean skillet over medium heat, cut-side down, until golden and crisp, about 1–2 minutes. Alternatively, place under a broiler for 30–60 seconds—watch closely to avoid burning.
Build sliders
Spread about 1 teaspoon of the Special Slider Sauce on the bottom half of each toasted bun. Place a piece of leaf lettuce on the sauce (this helps prevent sogginess), then top with a cooked patty (cheese side up on cheesed patties). Add a pickle slice and a few thin red onion rings. Spoon a small dollop (about 1 teaspoon) of sauce on the top bun and place over the assembled slider.
Finish & serve
If desired, sprinkle sesame seeds and chopped chives over the top buns for garnish. Serve warm. Leftover components (sauce, patties) refrigerate in airtight containers up to 3 days; reheat patties gently in a skillet or oven before assembling.
