Rim the glass
Chill a coupe or martini glass by filling with ice water for 1–2 minutes, then discard the water. Rub the lemon wedge around the rim of the chilled glass. Spread the granulated sugar on a small plate and gently dip the wet rim into the sugar to create an even sugar rim. Set the glass aside.
Cocktail Assembly
Measure and combine
In a cocktail shaker, pour 2 oz cognac, 1 oz orange liqueur, and 0.75 oz fresh lemon juice. If you prefer a slightly sweeter or softer edge, add 0.25 oz simple syrup. If using egg white for a silkier texture, add half an egg white (about 0.5 unit).
Dry shake (if using egg white)
If you added egg white, seal the shaker and shake vigorously without ice for about 10–15 seconds to emulsify and build foam.
Wet shake
Add a generous handful of ice to the shaker. Seal and shake vigorously for 12–18 seconds until the shaker feels very cold. This chills and dilutes the drink to the proper balance.
Double strain and serve
Open the shaker and strain the cocktail through a fine mesh strainer (optional) into the prepared chilled, sugared coupe or martini glass. The fine strainer will catch any small ice shards and egg white bits for a silkier presentation.
